The interesting thing about these cuisine rankings is how little of each country’s food is truly global. Mexican food, for example, is popular, but dishes like discada from the north of mexico, remains local. Most cuisines likely have similar regional hidden gems.

i lived in a primarily chinese and filipino neighborhood in SF for a couple of years and had my fair share of pork adobo, sisig and way too many lumpias 😅

Same here in the Philippines, even tho some of the city here has other special cuisine but the global food here and most famous is Pork adobo. Which all cities have this cuisine but different style.
