Potentially dumb question that’s been on my mind since first learning about crypto:

When you enter your seed phrase into a wallet, how do you know the provider isn’t doing something else with it, like storing it in a log somewhere? It happens with passwords - how are wallets different, why should we trust them?

But there’s still no way to know that the OS source code on git is what’s actually deployed to our phones, right? Is it still technically possible for a developer to interject  “log.write (seed)”  into their wallet code before deploying to prod? 
Just trying to understand as best as I can as a non-developer

It is basically this, right.
This is why we don't use closed source wallets.
You can pretty much git clone and run it yourself if u trust that it's gone through enough scrutiny (or do it yourself)

I was expecting to hear someone say the wallets are all open source and audited or some other reassurance
