Whiskey in Bloom: Young Single Malt from Tel Aviv, Israel 🇮🇱 This is a double barrel of ex-Bourbon casks and STR (Shave, Toasted, Recharred) a technique invented by Dr. Jim Swan who is also a mentor to Kavalan and 10th St Distillery in /sanjose among many others. On the nose: reminds me of Taiwanese Kavalan but with a yeasty fino/oloroso sherry note which I haven't seen combined before. Also peated, but lightly so like Asian whiskeys. Last note is green apple candy. On the palate: tastes hotter than 46%, not heavy on the viscosity likely due to the low ABV, but medium-strong on the peat, Hibiki style. With a hint of water on the palate: a bit more honeyed sweetness comes out combined with Laphroigy (read: stronger) peat. Overall punches way above the pour price I paid for it ($11), would buy a bottle.
