basically you’re looking for an “asian”bakery. they’ll often have mochi, rice cakes, egg yolk pastries, stuffed buns, etc.

never ventured into panettone but once did bobka which was i-n-s-a-n-e

sometimes sold as shokupan too. not too hard to make yourself either! it’s close to brioche/challah but less sweet than either

one unbelievably decadent option is to use leftover panettone too

need a bread that will be slightly chewier i think

challah is more light and fluffy imo, whereas milk bread is a bit more dense. either way, both delicious when cooked in butter.

i personally prefer challah or greek tsoureki cuz it's usually cheaper

but shokupan is p good. doesn't have to be japanese, korean/chinese bakeries will have it too most of the time
