why would they have the incentive (under capitalism) to cooperate with you instead of just doing this themselves and cutting you out of the loop?

That's the cool thing about capitalism. The insurance companies will just pay you to serve the opt in data from users without having to centrally plan an entirely new entity

Wouldn't we have to make a health insurance company for this?
