let’s cook something simple and cozy together — a warm italian roasted tomato soup that’s perfect with crunchy croutons 🍅✨
                                                                                   
what you need:
6–7 ripe tomatoes
1 red bell pepper
1 carrot
1 onion
4 garlic cloves
olive oil, salt, pepper, italian herbs a bit of broth or water
bread for croutons

how to make it:
roughly chop the veggies, place them on a baking tray, drizzle with olive oil, season with salt and herbs.
roast at 200°c (390°f) for about 30–35 minutes until soft and slightly golden.
put the roasted veggies in a pot, add a bit of water or broth, and blend until smooth.
bring to a boil, simmer for 5 minutes — done.
serve hot with crunchy croutons and a little olive oil on top.
