after 9 years living in the UAE, i finally did something new — visited a traditional farm in al ain… and had my first ever mandi. 47° heat, pyramid-shaped sand dunes, goats grazing in flower fields. ethical, local, halal meat — no waste, no overproduction. the mandi? slow-cooked underground. smoky, rich, unforgettable. this is the side of the uae most tourists never see. and it’s the one i’ll remember most.
