I thought it showed spend rate actually but I guess it just assumes it / is a parameter

Here is the query which tracks the daily change in ETH holdings (which equals all ETH, rETH, stETH, wstETH, and USDC holdings converted to ETH). You can likely smooth it out to get a 7D MA so its not as noisy. https://dune.com/queries/3249105
