But if all digital artifacts were destroyed, and we all moved away from using blockchains in the next 10,000 years, (or even think about the next 1 million years) it’s highly unlikely we will even have blockchains or LLMs then, weird historical artifacts from the past, it will be

Only as far as the digital infrastructure that hosts the LLMs can persist. A heavy solar flare can quickly wipe all of that from existence too.
