I don't know if you did it but I drop you a tip: Blanche the whole zucchini in water with salt for 5 minutes. That makes the zucchini colorful and a bit more soft, Once blanched just cut along and take out the seeds ,allowing you to add more filling, you also can put a bechamel on top of the meet and then cheese
