When you place the slab at the right height over the fire, it acts as a perfect makeshift pan, which has some nice side effects: 1. You have full control over the cooking temperature and can make a perfect medium-rare steak. 2. The heat is too low to burn grounded pepper, which isn't always the case when you're placing the meat over the fire directly. Burnt pepper tastes extremely bitter and even the smallest amounts can ruin a steak in no time. 3. If you pay attention to the angle of your slab, you can catch the juices from the meat instead of letting them drop through the grate into the fire. This doesn't only save you potentially important calories, but also - depending on the area you're camping - avoids attracting predators. But pursuit of honest scientific truth may not be enough. How do you determine which ethical values of mankind should take priority in prioritizing development of solutions for mankind’s greatest problems? What is equity or fairness?
