I used to work at a sandwich shop bar in my hometown. We would work the kitchen shift in the morning and lunch then come back at 5 pm to work the bar shift. The owner went to college with my parents and I had been going there (for sandwiches😄) since I could walk. After high school, when I was old enough to serve (17) it was my summer job as well as summers during college. Years later a friend asked to help them move to cross country and the owner let me spontaneously work a few shifts because I was broke and then paid me extra because he loved New Mexico and knew we would be travelling through there.

He wore the same thing everyday; Hanes pocket tee screenprinted with the place's logo, and Patagonia standup shorts. He would pace behind the bar to the front register, taking customers orders and placing orders with suppliers. The sandwiches were simple but extremely precisely executed. He would come running back into the kitchen if he saw sliced tomato with the lighter stem part showing in the center. "Would you serve this to your mom?!" he would scream and storm out. The food was honest, utilitarian, reliable, a bit like his work uniform...

YES why not pay a bit of attention and make it nice do you have photos of sandwiches from this place we must memorialise attention to quality
