In a bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, dried oregano, dried thyme, salt, and pepper. Add the chicken breasts to the bowl and toss until well-coated. Marinate in the refrigerator for at least 30 minutes, or up to 4 hours. Preheat the grill to medium-high heat. Oil the grill grates to prevent sticking. Grill the chicken breasts for 6-7 minutes per side, or until cooked through and grill marks appear. Remove from the grill and let rest for a few minutes before serving. Garnish with fresh herbs if desired, and serve with your favorite side dishes.
