I've lived in NYC for years and had never even noticed the existence of the "chopped cheese" sandwich until reading about it in Serious Eats. https://www.seriouseats.com/chopped-cheese-recipe-8605284 Had one today. It's delicious. Like a Sloppy Joe on a roll with mayo and ice cold shredded lettuce & tomato.
