I figured out why kids love their grandparents more than parents.

Grandparents can spend more time with the kids, while parents can't because they are rushing through their midlife crisis.

no kids so this is pure assumption on my part

would you say it's also because parents tend to be stricter/in general wouldn't want to coddle their children as opposed to the grandparents?

Most parents (including me) are stricter so that we can be lazy (or are busy with other work). 

For example, I want kids to eat quickly without distractions so that I can finish dishes quickly.

"Wouldn't want to coddle" is deeply rooted in "making sure that I don't have to take care of their tantrums for a long time".

I know there are tens of daily exceptions, but this is just a very practical way to look at it.
