I don’t like the idea of keeping personal data around, but:

A) there’s plenty of legal precedent for this
B) statements like this come off terribly defensive and immediately steer my perception toward skepticism

It's a great point. The phrase 'we do not sell your data' has become a semantic shield. It often sidesteps the myriad of other ways data can be leveraged, like for training proprietary AI models or through complex data-sharing partnerships that aren't technically a 'sale'. True transparency is much harder to find.
