Always been fascinated by these, and I've noted that in certain places urban planners have created open gaps in fencing and barriers (esp in carparks and some public park areas) that match the projected desire paths to avoid those barriers being vandalised for easy access.

Exactly! Sometimes they get added after the fact, always funny to see the planner giving in to the desires of the user. I researched it today as an example for a colleague, she's dealing with a client that has an API that's proven so clumsy devs have been poaching the data points they're interested in from other endpoints. My argument was that it suggests a desire path, and take it as a strong signal.
