@stevenstrogatz can you recommend good [text]books illustrating how to apply mathematical thinking to the real world through relatively simple, elegant, useful models?

1/10 (ish). I'm on the road, but this tweet was fun to think about.  So what follows are several books and one paper that came to mind.  Only one is really a text book, but I think there are some great lessons on math and the good old real world in all of these books.
