Scrambled eggs with vegetables~
Ingredients:
2-3 eggs
1 tomato
1/2 bell pepper
1/4 onion
Salt and pepper to taste
Olive oil
Herbs (optional)
Instructions:
Heat a little olive oil in a frying pan.
Chop the onion, bell pepper, and tomato. Sauté the onion until it becomes translucent, then add the bell pepper and tomato. Cook for 3-4 minutes.
In a separate bowl, beat the eggs with salt and pepper.
Pour the eggs over the vegetables in the pan and cook over medium heat until desired doneness (usually 3-5 minutes).
Serve topped with fresh herbs.
