I decided to splurge on the fancy bread from our local bread sommelier. Yes, that is a thing; you can actually do a course to become a certified bread sommelier in Germany. One day, if I can afford not work full-time, that's what I shall do. Outside of being a bread sommelier, the baker is a great role model in other regards, too. He's a "small is beautiful" kinda guy, having 2 stores and limited opening hours because, as he says, this way all employees are happy and he isn't stressed either. Little goes to waste as breads are quickly sold out and he serves a bunch of smaller villages with a once-a-week bread truck (where you can also pre-order from the weekly schedule) I think the world needs more businesses like this, that produce real stuff, and don't dream of conquering the world but are satisfied with being known as "that's where you go for awesome bread". https://www.akademie-weinheim.de/certified-bread-sommelier
