Man, I love squash. Roasted squash, grilled squash, sautéed squash, squash soup, squash curry, squash risotto, squash fritters, squash pasta, squash muffins, squash bread. There’s spaghetti squash that turns into little noodles. There’s butternut squash, acorn squash, delicata, kabocha…squashy squash squash, get into my belly.

So true. Squash stores pretty well too, though it certainly feels like we’re reaching the point here where it will be much harder to find in the grocery stores for a few months.
