Made some golden beet harbenero hot sauce - need to make it a bit thinner and going to try to ferment the harbs for the next batch. But overall, pretty good.

Roast golden beets - add a white onion and a full carrot when the beets are halfway done, with ten minutes to go add the harbeneros. 

Put all the roasted veggies + 6 cloves of garlic + 1 cup of water + 1 cup of vinegar in a pot and simmer for 12 minutes. Then add a few teaspoons of salt. Immersion blend everything - then add water/vinegar to get consistency as needed.

Need to play around with what veggies to roast, and if I should ferment the peppers beforehand.
