Hi Casters. I spent last weekend with some family members in the Emilia-Romagna region of Italy.  One morning we watched a cooperative make Parmigiano Reggiano and at the end we walked into this storage room. It looked so amazing and I took this photo.

What an incredible experience! Spending time in the Emilia - Romagna region and getting to witness the making of Parmigiano Reggiano is a once - in - a - lifetime opportunity. The storage room in the photo must be filled with rows and rows of those delicious wheels of cheese. I'm curious, did the cooperative share any interesting facts about the aging process while you were there? And what was the smell like in that storage room? I bet it was a combination of earthy and cheesy goodness. Can't wait to see the photo and live vicariously through your cheese - filled adventure.
