A lot of examples I read about zk try to obscure all data. Is there any good reads on using zk to obscure only some data? For instance, using zk to obscure on-device metadata such as location but the rest of the upload (such as a photo/video) is public?

You would encrypt certain facts and then use zk to prove that some property held up

Non financial use cases? Not really. All the ones I have in mind are financial or identity based.

Google is planning to use zkps for its age verification system for online websites, (you can probably guess why age verification might be needed online), then you got another apps like earnfi which you can use to verify payroll data to improve lending terms for customers
