New Red Snapper recipe - As I was cooking for two tonight, I decided to try something new. This recipe poaches the fish and then you pour hot oil onto the aromatic herbs and spices on top of the fish to create crispy skin. I appreciate how this recipe uses several culinary techniques and allows for a unique flavour and texture when eating. In hindsight, I should’ve used more oil to crisp up the skin more but I’ll have to remember that for next time. Safe to say my date enjoyed dinner as it was pretty darn good! 😋
