We called this "Lontong Balap" so weird cz it can mean rice cake racing 😂. but this is a traditional Indonesian dish made of rice cakes (lontong), bean sprouts, fried tofu, lentho (fried mashed black eyed peas), and crispy shallots, served with a savory garlic and soy sauce based broth and sambal chili.
