I'm curious why people keep saying that Turkish cuisine is one of the world's three major cuisines (the other two being Chinese and French), so I found a paper by a Korean researcher from 2021 on this topic. He believes that the commonly mentioned world's three major cuisines—Chinese/French/Turkish - have no verifiable origin.
In summary, the "three major cuisines" is more like the product of public narrative and cultural branding rather than an academic classification. Including "Turkish cuisine" in the "three major" is less about "taste ranking" and more about the synergy of "culinary tradition + imperial cultural capital + modern tourism/health narratives."
