how did this from 40 TPS to a magnitude higher within a few days?

this was just a temporary blip - you can see that all of the blocks are at the "max block size" which is 30m gas, so they are basically paying higher fees to fully saturate blocks. this drives up the base fee, which makes it less economic for them to do that. 1559 drives up fees exponentially with this kind of demand.
