完熟間近で安くなっていた南高梅で梅シロップを漬けて今年の梅仕事は終了!思い切ってフルーティな香り強めの純米日本酒、砂糖控えめで漬けてみました。3週間後に竹串で穴あけ、1か月~2か月半で飲み頃になるみたい。 発酵との闘いが始まります💪 Just wrapped up my ume project for the year! Got some almost- overripe Nanko plums on sale and made plum syrup 🍑Also tried something bold, infused them in a super fruity junmai sake with just a touch of sugar. Planning to poke the plums with a bamboo skewer after 3 weeks, and it should be ready to drink in 1 to 2.5 months. Now begins the battle against fermentation... 💪
