My pre-ferment took 12 hours yesterday (7 hours longer than I was hoping). So, late, late Christmas evening I was mixing and stretching the dough. First I over hydrated and then I forgot to put the dough in the fridge overnight. It’s clear I was not supposed to have bread today. Tomorrow we’ll try again.
