I really like that definition of integrity. The way to ameliorate failure is to accept it, acknowledge it, and make it part of who we are. We’re all going to make mistakes and we won’t get better if we pretend we are perfect.

My pre-ferment took 12 hours yesterday (7 hours longer than I was hoping). So, late, late Christmas evening I was mixing and stretching the dough. First I over hydrated and then I forgot to put the dough in the fridge overnight.
