I love sous vide but have to admit I do it a lot less since realizing I was cooking all my food in hot plastic. Would love to better understand the latest research on this. I stopped using my beloved water oven and started using my oven oven again. https://pubmed.ncbi.nlm.nih.gov/21367689/

I wonder if it's possible to use a suet-saturated cloth instead of hot plastic. probably has a dramatically shorter window, though.

i recently found out that this way, several grams of plastic end up in the brain over a lifetime, and there's no way to remove the plastic from the head afterward 😬
