Ingredients:
* Ciabatta (or focaccia) - 2 slices
* Mortadella, ham or other thinly sliced sausage - 50 g
* Stracciatella - 40 g
* Pistachios - 60 g
* Arugula - 80 g
* Garlic - 1 clove
* Olive oil - 60 g
* Parmesan - 40 g
* Salt, pepper - to taste
Preparation:
1. Making pesto: Place 40 g pistachios, arugula, garlic, parmesan and olive oil in a blender bowl. Beat the mixture until smooth, add salt and pepper to taste.
2. Preparing the bread: Dry the ciabatta slices in a dry frying pan or with a blowtorch until golden brown.
3. Assembling the sandwich: Generously spread pesto on one side of the bread. Top with thin slices of ham, then add the stracciatella and sprinkle with the remaining pistachios. Cover with a second slice of bread.
