Naan Recipe - 50% Einkorn / 50% AP
INGREDIENTS
250 g all-purpose flour
250 g einkorn flour
8 g kosher salt
8 g sugar
5 g instant yeast
120 g warm whole milk
120 g full-fat yogurt
75 g warm water
35 g melted ghee
GARLIC GHEE
60 g ghee
2 cloves garlic, minced
pinch of salt
METHOD
Mix yeast, milk, and sugar
Let sit 10 minutes
Mix with flour, salt, yogurt, water, and ghee
Rise 1 hour
Rest overnight
or rest 2 hours
PORTION + PROOF
Roll into 100 g balls
Spray lightly with olive oil
Proof 1 hour
COOK
Preheat oven 475F
Cast iron or steel in oven 30 minutes
Roll out dough
Cook in tandoor
or on cast iron until blistered
FINISH
Brush with minced garlic ghee
