Tonight’s dinner: kale and pea salad with white balsamic vinaigrette and crunchy chicken Ingredients for the salad: -1 bunch of kale thinly sliced -1.5 cups blanched peas (I used frozen peas and blanched them) -1/3 cup freshly grated parm For the vinaigrette: -1/3 cup olive oil -1.5 tsp white balsamic vinegar -salt and pepper to taste For the chicken: -1 lb chicken breasts cut into thirds and pounded flat -1 cup panko breadcrumbs -salt and pepper -olive oil (for pan frying the chicken)
