I just tried Proxyman with the iOS Simulator and I like it. Less finicky than using the Chrome DevTools. I can capture app boot without losing the connection nicely. I wish it had the waterfall visualization the chrome DevTools has though. I can probably recreate it by exporting the session and using a viz tool
