A brown cheese roux with tart berries (sea buckthorn or something) could be interesting! I once made a chocolate risotto, so not afraid to go off piste. 😂

Chocolate risotto!! I guess that isn’t as crazy as it sounds, Norway loves their sweet rice porridge during the winter which is basically a sweet risotto if I ever saw one
