Day 5 practicing omu-lettes I put a timer on for more science /demystify the process: - pan at #5 heat for 5 mins, then put butter in - 2/3 of egg batter in at 6 mins - stir new “curds” and pile into centre, add rest of raw batter after 20s - pan off stove and start folding just after new layer has chance to set I rate this one 6/10: ✅ custardy, pillowy, tapered, less “winging it” 🏗️ got a bit brown bc fussed too long with folding, still wrinkly which means I need to shorten “make curds” process to reduce gap between cooked and raw.
