so i've been seeing comments on ig that jamaicans are really proud of their oxtail dishes, i have to hunt them down if it's available in my city but so far, i can say indos cook the best oxtail dish, no one comes close

A friend if mine wondered once if the tail is just a gimmick because that with any dish that bore this title one would just assume the whole ox was used so why not just throw in the tail as well.

oxtail requires a slightly different set of skills to prepare, because in the same tail, the meat tenderness varies, bigger bones' meat are more tender than the meat at the tip of the tail common corners cut would be to put every parts of the tail in a pressure cooker to tenderize them asap, but then you would get big tail bones meat that are too soft to bite, crumbles upon being scooped out either by your fingers or utensils, the goal it to get small chunks of them fall out easily when scooped or bit what to do usually is, get a few tails and categorize them in sizes, then you can get uniform tenderness and texture
