Pumpkin soup is also one of our favourites. I missed this and only see it now but still would like to share this dish here. Fall and winter often means oven dishes. We call this one Mexican lasagna. First you stir red onion, red pepper, sweet corn and tomato cubes in a pan (add coriander if you like that). When this is ready, you make one layer with this in an oven plate, then a layer of sour cream and top it with nacho chips. Then a new layer of the ‘sauce’ sour cream and nachos and last layer of ‘sauce’ and top it of with grated Gruyère cheese. In the oven for 20 minutes and enjoy! (Rice on the side and season the lasagna with pepper, salt, and some spices at will).
