Why would it not be possible to use a ZK solution to allow someone to ship a physical item to another person, paid via crypto, without doxxing the recipient of the goods?

This is exactly the crux of every crypto<>IRL interaction. There has to be some physical oracle that is a trusted agent to confirm and/or execute the IRL component. I agree that having the "middleman" be relatively blind is an interesting component to aid privacy. But the added cost of shipping to an intermediary location for routing seems pretty expensive to bootstrap unless we're talking about primarily pretty exclusive and high value items.
