need to have more than 1 mini app open at a time!

It sounds niche / unworkable, but in practice you really do want to have an audio/video streaming while you're playing with other miniapps. Tough to get right.

2 would be excellent and cover my imagined use cases

Might as well just make a “dock” that can have 4 or so, in case you want to switch between multiple mApps without cold-booting them. Desktop should be able to handle it no problem.
