Want to up your cocktail game? Fat wash your liquors. Not just for /whiskey cocktails either. Olive oil martini • 2.5 parts olive oil washed gin • 0.5 parts dry vermouth • 0.25 parts brine (if dirty) • olive to garnish

To fat wash a liquor: 1. Mix fat of choice (EVOO, butter) well into liquor. Usually 1:9 ratio (fat:liquor) or so. 2. Let sit until separation occurs. 3. Flip upside down and freeze. 4. After few hours, take out of freezer. Flip and strain off the washed liquor. Use fat how you want.

BTW, you’re one step away from a clarified cocktail. Use a citrus based cocktail. Make the entire cocktail. Use milk as the fat. Clarified whiskey sours are superb.
