i don’t want it to lose all its moisture becuse ghe fine fibers of it lose alot above 125 degrees F. i prefer and WANT the juiciness fillet. 

other types of cuts have more marbling so medium rare just hits the right zone of juiciness

this is how i like my cuts cooked (places ate about to be cooked) anyways… 

rare for fillet mignon and medium rare for every other cut
