Yo fam It's almost weekend again How has been your week? My week has been n good Because we're almost close to the weekend I'll start by introducing you to Nigeria cuisines and the one I'll be talking about today is called AKARA AKARA first generated from the yoruba culture in Nigeria but eventually circulated all through Nigeria So I'll be dropping the guidelines Guidelines for Preparing Akara (Bean Cakes Ingredients: - 2 cups black-eyed peas or brown beans - 1 medium onion (chopped) - 1-2 fresh peppers (scotch bonnet or habanero, to taste) - Salt (to taste) - 1 tsp crayfish (optional) - Vegetable oil (for deep frying) - Water (for blending) Preparation Steps 1. Soaking the Beans - Pick and rinse the beans to remove dirt and stones. - Soak the beans in cold water for at least 1-2 hours

2. Peeling the Beans - After soaking, rub the beans between your palms to loosen the skins. - Place the beans in a bowl of water and gently agitate to separate the skins (they will float to the top). - Pour off the skins and repeat until most are removed. 3. Blending the Batter - Drain the peeled beans and blend with onions, peppers, and a little water until smooth (the batter should be thick, not runny). - Add salt and crayfish (if using), then whisk or stir vigorously to incorporate air (this makes the akara fluffy). 4. Heating the Oil - Pour vegetable oil into a deep pot (about 2-3 inches deep) and heat on medium-high. - Test the oil by dropping a small amount of batter—if it sizzles and rises immediately, the oil is ready.

Frying the Akara - Scoop the batter with a spoon and gently drop into the hot oil (you can shape into balls if desired). - Fry in batches, turning occasionally, until golden brown (about 3-5 minutes). - Remove with a slotted spoon and drain on paper towels. 6.
