looking around for a solid travel watch if anyone has any recs or favorites! can even be a grail, trying to get a full view of the field right now things it'd ideally have - GMT complication - reasonably waterproof - pretty durable - not too flashy (but send your flashy ones too!)

My recommendation would be Traska, specifically the Venturer line. It's an American brand and what makes them standout is outside of a ceramic case, they're the most durable watches. Seriously, take a screwdriver and try to scratch one up. You won't even make hairline progress on it. Hardened steel! Great travel watch, IMO. https://www.traskawatch.com/collections/venturer
