Best full dish was pepián! it's a mayan-rooted stew that's really rich and earthy. It's usually made with some kind of meat but my homestay fam is all veggie and it was still delicious (though I bet when it's cooked with meat fats it's extra rich) But in general all the fruits and veggies here are incredible so I've gotten tons of fresh fruit salads every morning alongside locally grown coffee and corn tortillas topped with queso, beans, and avocado

Thanks for sharing. Really brings me back. My Guatemalan grandma used to make me fresh corn tortillas with queso on top as a kid. It sounds so good right now.

That's such a beautiful memory. And also purely so delicious. It's just a bummer I can't seem to find good corn tortillas anywhere (in Seattle) or I'd have them more often. None of the supermarket ones I've tried even come close.
