In Japan I noticed their commitment to wearing uniform in various professions which I found very photographic. This might be ignorant but it almost seemed like there is a sense or honour to wearing uniform that has been lost in the west. Maybe it’s just the monoculture. I have noticed the French are also quite serious about uniform specifically with chefs and I admire their dedication. I would love to document one of these chefs sitting on one of the benches along the beach smoking a cigarette with their enormous toques. You would never see this in Canada.
