Touchscreen devices are too user friendly, they abstract away the fact that a phone/tablet is a computer made up of several parts. That there are many many intermediaries between human touch and things changing on the screen. A keyboard emphasizes that separation and implicitly teaches something about how computers are actually structured (especially when things go wrong)
