it might be better to start prototyping on a RISCV MCU. Something like ESP32-C series instead of RPi Pico

just remembered that the new rp2350  rpi pico has riscv cores included in addition to cortex-m33, so pico could be a nice choice too

Initially the fast prototyping could be done using micropython. So basically port py-evm to micropython. And then port other parts after that

but eventually we might need run things on the metal itself. So a trezor like approach would be nice. App layer on micropython and some parts in C/Rust as required. Trezor team seems to have done some parts already for interacting with the chains
